Welding the thin (1mm) stainless to a thicker steel roof will be difficult. Do you really want to weld it anyway? Ours passes through a larger hole and has a heat resistant rubber gaiter/collar fitted. High temperature silicone sealant keeps it firm in position and off the mild steel.

No expert, but isn't it surprising to have a flue welded to bulkheads rather than passing through a collar allowing some movement when the boat flexes? Like this for example?

One advantage of having no metal to metal connection to the roof is that your chimney heat is not transferred to the roof and you will get a better draw.
